Houseboat Recipes: Pumpkin Bars

Pumpkin BarEverybody loves eating, especially onboard your houseboat with friends and family. If you are planning your end of the season party (or just in the mood for making a yummy fall treat), these pumpkin bars are perfect. They are quick and easy and simply delicious. If you are planning for a lot of people I would double the recipe because this will be a crowd pleaser.

Prep Time: 15 minutes
Cook Time: 35 minutes
Difficulty: Easy
Servings: 24 bars

Ingredients

Bars:
1 Box of Spice Cake Mix
15 oz. Canned Pumpkin
1 Cup of Miracle Whip
3 Eggs

Frosting:
1 Package of Cream Cheese
1/4 Cup Butter softened
2 Tbsp. Milk
1 tsp. Vanilla
4 Cups Powdered Sugar

Preparation Instructions

Mix cake mix, pumpkin, miracle whip and eggs. Beat until smooth. Grease 9- by 13-inch pan. Pour batter in pan and bake at 350 degrees for 35 minutes.

In the meantime mix cream cheese, butter, milk and vanilla together. Add powdered sugar a cup at a time and mix until smooth. Frost bars when done.
